Villagers spawn naturally as Nitwit and they can changed their profession based on blocks near to them. You can change their profession by breaking their workstation and placing the new one. Once you made a trade with that villager, their profession become locked and can't be undone.

When a villager unlocks a new trade at a higher level, it almost always grants more experience than every lower level trade. Villagers have a maximum supply of items and after the player has traded for an item that many times, the villager's supply of the item is exhausted. This results in the trade being temporarily locked. A player can continue to trade for the villager's other available items, if any.

If you do not do this it is very possible to lock out the villager permanently: As if you are incredibly unlucky you can get all trades down to 1 or 2 tries left and with only the 20% chance of all trades being unlocked it is possible to lock out villagers forever.
